A very interesting coffee coming fro a medium Cocoa, floral and citrus tones.
This coffee is grown by smallholder farmers from Molino Norte in the Matagalpa, Nicaragua region. This region is not as high as some from which our other coffees are coming from. The berries can be found at an altitude starting around 900m but still going up to 1590m.
The variety is made of Yellow and Red Catuai, Catimor & Parainema and gown on a Clay Minerals.
The process goes this way: beans are fully washed, fermented for 12-14 hours and then dried on patios and raised beds.
